Festive Wild Rice
Ingredients • 1 cup long grain brown rice
• 1 cup wild rice
• 1/2 cup pine nuts
• 6 cups water/low sodium chicken broth
• 1/2 cup sliced mushrooms
• 1/2 onion chopped
• 1 block firm tofu, cubed
• 2 TBS low sodium soy sauce
• 1/2 tsp each basil, thyme and sea salt
fresh parsley for garnish
Preparation
- Preheat oven 350. Wash and rinse rice.
- Toast pinenuts over medium heat in frying pan. Til golden
- Prepare casserole with non-fat cooking spray and place water and rice in casserole.
- Arrange all other ingredients on top of rice. Don't mix them.
- Cover and bake until water is absorbed 1 to 1 1/2 hours garnish with parsley
